The classical tradition for a exclusive brut, champenoise method
Variety: Pinot Noir;
Vineyard: Vigna Del Mare, 300 meters above sea level, harvest by hand, yeld 50 q.li per ha.
Breeding: Annual Renewal, 5000 strains per ha, west exposure.
Soli: Alternation of arenaceous marl and loam with characteristics stones (cogoli).
Vinification: Soft pressing, immediate separation of the skins, fermentation in steel tanks, controlled temperature. Subsequent fermentation in the bottle and aging on yeasts for at least 24 months.
Appearance: Pale straw yellow color with bright hues. The perlage is fine and continuous.
Nose: Good intensity, hints of fruite and spices balanced with notes of yeast.
Taste: A nice acidity enhances the freshness, fruity, intense, delicate but persistent.
Production: 1500 bottles per year.
